When I worked for Pacific Gas & Electric company (33 years) we had 'hook gage' that our gaffs had to match perfectly after sharpening. That gage made sure you had a 'chisel point' on the flat side- not much but enough to insure if you 'kicked out' the hook would instantly cut back in when it contacted wood again. I sharpen my hooks the same way I did my lineman's hooks or gaffs whatever you wish to call the. I don't drop or miss many fish. Add to this a modern, quality jig hook and the dropped fish ratio goes almost to zero.
