I haven't actually heard anything good about the Hatch reels, I haven't ever owned one, just information I gathered from reading other fisherman's problems on different fly fishing bulletin boards. I also heard they were giving heavy discounts on them not to long ago. I just recently switched over to the Tibor signature model fly reels and love them. The Tibor has a vary large sealed "CORK" drag and very few moving parts with a quick change spool, I believe it's the very best saltwater reel on the market.
For backing I actually don't like the hatch backing in 68 pound test. I like 50 pound power pro for making small knots. I bought some Hatch backing and took it back off, I didn't like the way it made bulky knots.
For Dorado - Rooster's in Baja I like the Rio OBS tropical floater with 6 foot leader.
Disclaimer, It doesn't make any difference to me what brand or kind of gear anybody else uses, I was simply offering you my opinion on what I use in Mexico for the last 18 years and whats works without breaking.
Good luck down there.
