EP Tying and Hook Size

Going to be tying some EP style baitfish flies for an upcoming Colombia Amazon peacock trip at the end of February. Valid reports from this new fishery indicate that there are many catchable 20# to 20+# peas available for the taking.
I'll be using Gammy SP11-3L-3H hooks for these big guys. Unfortunately, I'm starting to think that the shank on these hooks may be too long to make a proper EP style baitfish fly (4-6" long,) and other than getting different hooks, I'd like to know if you think I can still use them. And if I can't, could you recommend a better sized hook to use?
However, I also plan on using these hooks for EP streamers and Clouser style flies.
