Long Island is a great place, with lots of bright white, shallow flats and tailing fish. I've been three times, and in fact stayed at Stella Maris one of those times. The head guide there, Docky Smith, is very good by reputation, but I did not fish with him. I found an independent guide named Ken Capron, www.eagleeyesbonefishing.com, and he is just awesome. He puts in a very looong day, uses his boat to ferry to the flats, and then walks miles and miles hunting fish. He gets completely excited everytime you hook up, and he has guided at other Bahamian islands. He's just hardcore, and a lot of fun to hang out with, so I would definitely contact him (and tell him Jonny King sent you). As far as DIY, I didn't try on my own, but the flats near the airport seem to be a good choice, and Ken might be able to give you some hints as well, but getting a guide is definitely worthwhile for the most part.
