I always shoot my Nikon DSLR. I'm shooting the D90 with a Nikkor 18 - 200 VR lens. I always use fill flash for in-boat shots. I use the Speedlight SB-600. If I need to, I'll use a photo editor to add touches if needed.
I've always considered my SLR cameras as "tools-of-the-trade" and while I use caution to keep them dry - fresh or salt water, I don't baby them either. I keep my camera with strobe attached in my Mangrove neoprene bag, along with some other gear and extra batteries. I currently don't own a point`n shoot camera and I'd use a cell phone camera only as a last resort. If you want really good quality photos, you need to use a quality camera.
DSLR cameras also give me the speed I need to take a lot of photos quickly.
