I caught my first tarpon on the old, yellow/orange/griz splay-winged pattern; and plenty of others on the griz/red. I used to fish those flies on 3/0 hooks and the length often was four-inches or longer.
All those styles of flies tended to foul a bit during casting; and if you didn't get the tail tied on just right the fly wouldn't track right at times. The smaller version work pretty damned well though.
We started using rabbit strips for tails for better action and less fouling if you tied in an anti-fouling loop.
For the Yucatan I really like my Sabalo Yucatan and similar styles in various colors. I also had good luck with Mini-Whistlers tied both on jig and standard J hooks.
A great book showing a bazillion good tarpon flies is Lefty's book - Salt Water Fly Patterns. You'll find a few of my "not so traditional" tarpon flies in it too.
