Years ago, during the March Yellowtail time in Loreto, I caught a Baja Amberjack up in yellowtail alley. It was jack like as you would expect, like a yellowtail only amber on top rather than green; distinctly different colors, plus the black eye bars, but it was shorter and deeper than a yellowtail, so it was the exact shape of your picture fish; but nothing like that color. They don't call them amberjacks for nothing. All in all, I've caught about three of those things in Loreto; never bigger than about 15 pounds. Still pulled like hell and shook its head too.
But your fish doesn't quite look like Dan's Almaco Jack either (color wise), but I haven't seen Dan's critter, so I'll take his word for them looking like your picture.
But not amber I would say.
