I take three primary lines for each of my 10 to 12-weight rods: Rio Outbound Short Tropical floater; ROS tropical intermediate (30-foot head); and a T-14 Rio Custom Cut - head 30 to 33 feet long. I rarely fish lighter than a 10-weight just because you never know what you're going to hook into, especially when fishing the reefs and rocks.
I like an 11- to 12-weight for dorado (love the TFO Blue Water "Baby Blue"; and the "Medium" for the bigger critters. I line them the same.
Some anglers like to bring lighter sticks 8/9-weights for catching the smaller jacks, scad and such. I line those with intermediate and T-14.
For billfish, if I'm tossing big streamers, I like the intermediate - tossing big tube Ron Dong Crease flies on top, the ROS Tropical Floater; for dredging the T-14 with get it done.
