Marcus, that 21 foot deep vee of mine with three people weighs close to 4,000 pounds and puts out a pretty good bow wake, probably over two feet, when I'm down around 12 mph, not on plane and not in displacement either. just pushing water. I was traveling at about 25-30 mph when the guy jumped my wake. At that speed my wake's less than a foot.

Now if I really punch it and run WOT my boat does about 42 and the wake flattens out even less but the gallons per hour jump to 17-19. At the current price of gasoline I back off to about 4400 and the GPH drop down to about 8 with a water speed of 30mph.

The guest that observed the accident said that the driver had his engine tucked in so that when he left the water his boat jumped with the bow pointing down. He was an accident waiting to happen.

New boat, lead foot and not enough experience. If he had hit a really big wake like a cruiser, he might have done an endo 360 and landed back on his hull still streaking along at 75 mph! Now THAT would have been a sight!
