As other have said, DIY fishing around Key West can be tough. I would hire a guide for one day. There are a few places in the lower Keys you can wade fish by youself, but finding the fish can be a problem. If you can pick up a book FLYRODDING FLORIDA SALT it can give you a few spots in the middle and lower keys.
